Roti Pizza



Who doesn't like pizza? Originally from Italy, it is quite popular worldwide. There are ready-made pizza base available and you could microwave them. But to be honest, most of them taste meh!

What if you could have a healthy tasty pizza which could be cooked in no time? Difficult to believe. I know. But hopefully this recipe would be nothing but magical.

The idea behind this dish is simple. Roti or chapati is a typical Indian flatbread that is freshly prepared and consumed. This serves as the base for pizza. We add toppings of our choice and wrap it with a nice cheese coat.

So let's get started.

PART 1. BASE
  1. Take some whole wheat flour (3-4 cups) in a large flat pan. Add 1 tbsp salt. Add roughly 1-2 cups of water and make dough.
  2. Once the dough is ready, roll it using a rolling pin into circular chapati and bake it on a hot tawa or flat pan. Heat on both sides so that the chapati or roti is cooked.
  3. Keep the rotis aside.
  4. You can also use readymade chapatis or leftover ones.
PART 2. TOPPPINGS
  1. Take red, yellow and green capsicum, onion, tomato, zucchini and chop them into square pieces. You can also add other toppings of your choice. I also added small cubes of cottage cheese or paneer.
  2. In a mixing bowl, add some oil, chopped veggies, salt, pepper, grated cheese and mix well.
  3. Microwave it for around a min so that the veggies get somewhat cooked.
  4. Keep the bowl aside.
PART 3. COOKING
  1. Apply pasta sauce or chutney or yogurt on the chapati. This would form the base on which we would add toppings.
  2. Now add the toppings from our mixing bowl on top of the chapati.
  3. Heat the chapati on tawa for sometime so that the base becomes slightly hard.
  4. Now put the chapati in a microwave conatiner. On top of the pizza, add cheese slice and frozen coriander cube.
  5. Microwave for 1 min and take out the microwave container.
  6. The roti pizza is ready to serve. You can add oregano, chili flakes and other seasonings as per your taste.
