This has an interesting story. We planned to make Paniyaram or Appe but ended up making Uttapam. This is made from semolina and veggies and tastes yum. There is very less prep time and you can serve it for breakfast.
- Take a bowl and add 2 cups of sooji or semolina or rawa.
- To it add 1 cup of curd or yoghurt, salt (~2 tsp).
- Mix it well. Add water if needed to get the mixture to a batter consistency. Let it rest for 20 mins so that the semolina absorbs the curd and water.
- Now, we will work on the veggies which form the masala and would be added to the batter later.
- Finely chop onions, capsicum (red, green, yellow), carrot, and green chili.
- [Optional] Also mince garlic and ginger.
- Grate coconut so that you could fill ~1/2 cup.
- Now, in a pan, add 2tbsp of oil and heat it on low flame.
- Add mustard seeds or rai (1 tsp), chana dal (2 tbsp), urad dal (2tbsp) and some curry leaves (2 tbps) to the oil in the pan. Now add ginger and garlic. Stir it for sometime.
- Now add green chili and onions. Stir the mixture till it becomes transparent.
- Add other veggies. Stir for sometime so that they are half cooked.
- Switch off the heat and let the masala mixture cool down.
- Add the masala to the batter which has been resting for 20 mins now. Stir it well.
- Add fruit salt or Eno to it. The mixture will be slightly frothy. Add water to get batter consistency similar to idli-dosa batter.
- Now switch on flame and put a non-stick pan (ideally one with a cover). Add some oil and apply it evenly through a brush.
- Once the pan is slightly hot, add the batter to the center of the pan and spread outwards in spiral.
- Cover it and let it cook for 3-5 mins on low flame.
- Check that the side facing pan has become slightly golden brown. Turn over the uttapam so that the other side is now facing the heat.
- Cook for another 2-3 mins.
- Now, our rawa uttapam is ready to be served. You can serve it hot with green chutney, coconut chutney or tomato ketchup as you like.
